Cheesecake and Chocolate? With Berries? Oh yes! Dark Chocolate Raspberry Cheesecakes.
Love is in the air… That little dude is out and about shooting little arrows into many hearts to spread the love! But, he went right past my house – so much lovin’ goin’ on here, he need not stop!
But to share even more love, I did have to run to the store for those special cards and goodies for those special someone in my life today.
AND… then I had to decide what I wanted to make for Valentine’s Day treat. Just a little sweet for my sweetie. ♥
I have shared with you my chocolate “fabulicious” dessert, Flourless Chocolate Cake With Chocolate Ganache and this would be perfect for today, but I wanted it easy to make – and easy on the waist – I always get treated to a fabulous dinner, and need just a little sweet to top it all off! Dark Chocolate raspberry Cheesecakes! Perfect.
So what makes this cheesecake easy on the waist?
What is in this delicious little cheesecake?
- graham crackers
- low-fat cream cheese
- low-fat Greek yogurt
- eggs
- sugar
- vanilla
- raspberries
- 60% dark chocolate
You would not know that these little gems are lower in fat and calories than most cheesecakes. The creamy texture is awesome… just like a full-on – full-fat regular cheesecake recipe. But, no guilt here! Awesome eh? I am just thinking of all of you that want to indulge.. but not give up one… luscious… bite.
Raspberries and shaved chocolate = love
Yes… A little cheesecake – a little coffee – and a nice conversation always make for a good sweet Valentine’s Day.

- ⅔ cup graham cracker crumbs (I love inside the box gluten-free)
- 2 tbsp plain low-fat Greek yogurt
- ¾ cup plain low-fat Greek yogurt
- 8 oz. low-fat cream cheese, room temperature
- 2 large eggs
- ⅓ cup sugar
- 1 tsp vanilla
- 10 oz fresh raspberries
- 1 tbsp sugar
- 1 tsp fresh lemon juice
- 1 pinch of sea salt
- 2 tsp cornstarch
- 2 tsp cold water
- ½ ounce 60% dark chocolate, shaved
- Preheat the oven to 325 degrees.
- Mix graham cracker crumbs with ¾ cup yogurt until evenly moistened; using the back of a spoon press 1 tbsp crumb mixture into the bottom of each muffin cup.
- Using an electric mixture, beat together 2 tbsp yogurt, cream cheese, eggs, ⅓ cup sugar, and vanilla. Spoon into cups.
- Bake until the top is set - 15-20 minutes. Let cool. Refrigerate for 1 hour.
- Combine the raspberries,1 tbsp sugar, lemon juice, and salt in a small saucepan over medium heat, and bring to a simmer.
- Using a fork, mash some of the raspberries.
- Combine the cornstarch with cold water and stir into the raspberry mixture, simmer for 1 minute.
- To serve, add 1 tbsp raspberry topping and a tsp shaved chocolate to the top of each cheesecake.
